Today my body is craving a plant-based meal so naturally I thought to whip up my BAKED PEANUT TOFU. 🙌 It’s basically just tofu marinated in a delicious peanut sauce that’s baked until golden brown and crispy (essentially looking like chicken nuggets from Chick-Fil-A!). Just pair it with rice or noodles and a side of veggies (I love it with roasted broccoli or my garlicky kale) and you’ve got yourself a full meal!
The peanut sauce is so versatile. I’ve used it on a variety of different protein and veggie dishes and it’s been 🔥 every time. It’s so easy to make and only requires 5 ingredients.

• rice vinegar • miso paste
• red pepper flakes
