What would pumpkin season be without a pumpkin version of my baked oatmeal?! ๐ŸŽƒ Well, the good news is that we donโ€™t even have to think about it because the recipe for my PUMPKIN BAKED OATMEAL is now #ontheblog. ๐Ÿ™Œ Itโ€™s vegan, gluten-free, dairy-free and SO SO yummy!

This is seriously the best cozy fall breakfast, made with oats, pumpkin, maple syrup and loaded with lots of cinnamon goodness and pumpkin spice flavors. I love serving it warm with a little extra maple syrup or almond milk on top. ๐Ÿ’ƒ

PS: If you love all things pumpkin oatmeal, I also have a recipe for slow cooker pumpkin pie oatmeal and pumpkin pie overnight oats. Because you can never have too much pumpkin deliciousness. ๐Ÿ’๐Ÿปโ€โ™€๏ธ

  • Oh my gosh! We made this last night, but could not wait until morning to enjoy it. We had it hot from the oven with a scoop of vanilla ice cream on top. It was AMAZING! ๐Ÿ˜๐Ÿ™Œ Definitely a winner in our house!
