We’ve been loving sheet pan meals lately and the one I made earlier today was SO good (and easy) that I had to share. πŸŸπŸ πŸŒΏπŸ’―

All you need: 1 lb of white fish filets (I used cod), 1 chopped sweet potato and 1-2 cups of broccoli florets, 1 1/2 Tablespoons of melted ghee (or coconut oil), Trader Joe’s chili lime seasoning, salt and pepper. Oh, and a sheet pan. πŸ’πŸ»Pre-heat your oven to 450Β°. Add sweet potato chunks and broccoli to the pan and toss with 1 Tablespoon of melted ghee, 1/4 teaspoon salt and pepper. Roast in the oven for 12 minutes. While the veggies are roasting, toss fish filets with remaining ghee and liberally sprinkle the chili lime seasoning over the fish to coat. Once veggies have roasted, remove pan from the oven, scoot the veggies to one side of the sheet and add your fish filets to the other. Cook for another 10-12 minutes fish is cooked and flakes easily with a fork. The cooking time may vary depending on the size of your filets. Enjoy! πŸ˜‹
