Was craving pumpkin bread today so I made another batch of my flourless pumpkin muffins and dang, they totally hit the spot. 🎃💃🏻💯 I’ve made them every year since I originally posted the recipe back in 2013, but I’m always surprised at how well almond butter works to replace the flour. It’s crazy… and the muffins are so crazy good. .
The original recipe is for mini muffins but I updated the recipe with notes if you want to make 12 regular sized muffins instead. Get the link in my bio. 🙌

What do you think would happen if I used tahini and a little almond flour? I’ve got hazelnut/almond mixture but I think the hazelnut flavor will take over too much.

I just made these as mini muffins and they’re fantastic!!! I can’t believe how fluffy they are! I had to sub honey for maple syrup because I didn’t have any, and they turned out fabulous. And I left chocolate chips out of half the batch so I could give them to my one year old for breakfast! (And so I can eat all the chocolate ones myself 😂🤫) SO yummy, thank you for the recipe!
