Today’s lunch salad was so stinking easy and loaded with flavor. In the bowl I’ve got a bed of baby spinach, roasted cauli, a chopped Medjool date, a can of tuna with parsley on top, kimchi and @rego’s turmeric tahini dressing. 🥗💃🏻💯 Was going with a Middle Eastern theme and then threw some kimchi on there for a little spice and the #guthealth benefits! 🤓

As I was typing this caption I realized that saying “I’ve got a bed of baby spinach” is so funny and I almost wrote it in emojis (🛏👶🏻🍃) because I thought that would be hilarious. 💁🏻‍♀️ But seriously, who the heck started calling the base layer of a dish a bed? I need to know! 😂
