This meal prep bowl saved my life last week and I’m planning to make similar bowls for lunch this week because I loved the combo so much! The recipe is a take on my kale & sweet potato brown rice bowl but with spinach and quinoa instead of the rice, some shredded chicken for extra protein and a sprinkle of green onion, cilantro and cabbage for color. The peanut sauce still makes it 💯!
