Still celebrating Cinco de Mayo over here with this tofu taco salad! ๐ŸŒฎ๐Ÿฅ—๐Ÿ’ฏ

In the bowl: used my @oxo salad chopper bowl to chop baby spinach, carrots, red onion, cucumber and leftover tofu cooked with @primalpalate taco seasoning (check my stories from last night to see how I made it). Topped the salad with fresh cilantro, salsa, sour cream, tortilla chips and homemade secret ingredient guacamole (spoiler: itโ€™s frozen peas)! The peas give the guac a hint of sweetness and a bright green color and make it a little lower in cals and fat. ๐Ÿฅ‘ ๐Ÿ™Œ Recipe for the frozen pea guac is on my site already.
