Sharing another fall favorite today… HEALTHY PUMPKIN BREAD! 🎃🍞🙌 It’s loaded with tons of pumpkin spice flavor and pairs nicely with a cup of hot coffee on a crisp fall morning. 🍁🍂⁣

Most pumpkin breads are far from being healthy. They’re loaded with tons of sugar and lack fiber, so I was determined to make a version that was low in sugar and made with a high-fiber flour, but was still satisfying and delicious. TBH, I think I hit the jackpot with this version if I do say so myself. 💁🏻‍♀️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣
The entire loaf is sweetened with only 1/4 cup pure maple syrup and a little cinnamon coconut sugar on top. The coconut sugar topping makes for a nice crispy crust and it might just be the best part. 💯It’s also made with whole wheat pastry flour, which offers a lighter texture than regular whole wheat and can be made #vegan with a flax egg instead of a regular egg. ⠀⁣
