Shared a little of my meal prep on stories last night, but here’s the full spread! So many veggies this week!! 🍠🥒🥬🥕💃🏻💯 I did some of the prep while dinner was cooking and then finished up after, a totalidade of about 2 hours. Feels so good to be organized and prepared with healthy meals for the week! 🤓

From left to right we’ve got cucumbers, chopped carrots, a chickpea radish salad with homemade balsamic dressing, instant Pot brown rice (such a game changer for perfect rice), sliced radishes, leftover cabbage noodle pad Thai (we had this for din last night), roasted veggies and last but not least all the veggies + lentils ready to go into my Instant Pot for the butternut lentil stew I’m making for dinner tonight. 💯
