I based this recipe off my healthy apple pancakes, but weโ€™re using pumpkin instead of apples for another fall flavor. Itโ€™s a close call, but I think this pumpkin version might take the cake (or stack in this case!). Especially with a little pb and maple drizzled on top. ๐Ÿ’๐Ÿปโ€โ™€๏ธ

Theyโ€™re super simple to whip up. All you have to do is toss the ingredients into your blender to mix and pour directly into the skillet for cooking. ๐Ÿ™Œ Top with a little nut butter and maple syrup and voila — youโ€™ve got yourself a decadent, powerhouse breakfast! โ €โ €โ €โ €โ €โ €โ €โ €โ €
