I based this recipe off my healthy apple pancakes, but weโre using pumpkin instead of apples for another fall flavor. Itโs a close call, but I think this pumpkin version might take the cake (or stack in this case!). Especially with a little pb and maple drizzled on top. ๐๐ปโโ๏ธ
