PSA: You can roast frozen vegetables. 💁🏻‍♀️ I shared about this in my story last week and it blew so many minds! 🤯 And I get it, being able to roast frozen veggies is such an awesome little hack. 💯

It’s such a time saver… all you have to do is dump the veggies on a baking sheet, season and roast! And although they don’t taste exactly like fresh veggies that have been roasted, they still get a little crispness to them and I think they’re pretty darn good. (Swipe all the way right and you’ll see some of the crispy bits on the baking sheet.)

I’ve roasted all sorts of frozen vegetables using this same technique, but broccoli is probably my favorite! 🥦 I’m sharing the recipe below. Feel free to try it with your favorite frozen veggie and let me know how it turns out!

Roasted Frozen Broccoli 🥦🥦🥦
• 1 16 oz bag frozen broccoli florets
• 1 Tablespoon avocado or olive oil (or spray)
• 1/2 teaspoon sea salt
• 1/4 teaspoon ground pepper
• Additional seasoning options: onion powder, garlic powder, cayenne pepper, curry powder
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1️⃣ Preheat oven to 400°F. Empty bag of frozen broccoli florets onto a baking sheet or stone. If you’re using a baking sheet you can line it with parchment for easy clean-up.
2️⃣ Drizzle oil over broccoli, add seasonings and toss to combine.
3️⃣ Place in preheated oven and roast for 25-30 minutes, tossing once at the 15-minute mark.
4️⃣ Remove from oven and serve warm.
