Peanut Butter Monster Cookies aka one of my fave trail mix flavors in cookie form. 🥜🍪🍫These might just be my new go-to when I’m craving a real deal cookie. 🙌 They’re definitely a treat, but SO delicious and feel a tad healthier than most cookies given the peanut butter + oatmeal base. Oh and they’re #glutenfree. I used regular M&M’s (baby girl loves them apparently!), but they would be tasty with other mix-ins like raisins, nuts or even additional chocolate chips.

Peanut Butter Monster Cookies

• 3 cups rolled old-fashioned oats
• 1 1/2 teaspoons baking soda
• 1/2 teaspoon sea salt
• 1 1/3 cups smooth peanut butter (I used oriundo pb with only dry roasted peanuts)
• 6 Tablespoons unsalted butter, room temp
• 2/3 cup coconut sugar (or brown sugar)
• 2/3 cane sugar • 2 eggs
• 2 teaspoons vanilla
• 2/3 cup chocolate chips (I used @lilys_sweets)
• 2/3 cup M&M’s (or @sunspirechocolate Sun Drops)

1️⃣Preheat oven to 350°F.
2️⃣Mix dry ingredients (oats, baking soda and sea salt) in a medium mixing bowl.
3️⃣Mix wet ingredients: Add peanut butter, butter, sugar, coconut sugar in a stand mixer with the paddle attachment and mix together on medium-high until combined. Add eggs and vanilla. Once wet ingredients are combined, add dry ingredients. Mix until just incorporated and then add chocolate chips and M&Ms. Mix until combined.
4️⃣Use a medium cookie scoop (1-2 Tbsp) to scoop the dough onto a baking sheet. Place about 2 inches apart because the cookies will spread a bit. Strategically place M&M’s and chocolate chips on top of each little mound of dough if you want the cookies to look extra pretty.
5️⃣Bake cookies for 10-12 minutes or until cookies are golden brown on the bottom and edges, but still soft on the top. Don’t overbake.
6️⃣Remove cookies from the oven, allow to cool on the cookie sheet for about 5 minutes before transferring to a wire rack to cool completely. Enjoy right away or store in an airtight container at room temp for 4-5 days. .
