Peach baked oatmeal coming in hot! 🍑🔥 I just had a bowl of this delicousness for breakfast and it’s SO tasty… especially topped with the sítio peaches we got from the farmers market last weekend. 🙌

And guess what? I’m doing something I don’t normally do… sharing the full recipe here on IG!

The EBF website is going to be down for a bit today (she’s getting a much-needed facelift) SO I thought I would share an early sneak peek of this new baked oatmeal that will be #ontheblog soon. So many people have been patiently waiting for this peachy goodness and I’m happy to give y’all early access!

PEACH BAKED OATMEAL
.
• 2 cups old fashioned rolled oats
• 2 1/2 cups milk (I used unsweetened vanilla almond milk)
• 1 teaspoon cinnamon
• 1 teaspoon vanilla extract
• 1/2 teaspoon almond extract
• 2 cups ripe peaches, divided (1 cup chopped and 1 cup sliced)
• 1/4 cup maple syrup
• 2 Tablespoons melted coconut oil or butter
• pinch of sea salt

1️⃣Preheat oven to 375°F.
2️⃣Measure out 1 cup of chopped peaches and 1 cup of sliced peaches.
3️⃣Add oats, almond milk, cinnamon, vanilla, almond extract, 1 cup chopped peaches, maple syrup, coconut oil and sea salt in a large bowl.
4️⃣Pour into a square baking dish sprayed with non-stick spray and top with remaining sliced peaches.
5️⃣Bake uncovered for 45-50 minutes.
6️⃣Remove baked oatmeal from the oven and let sit for 5 minutes to cool. Portion into a bowl and serve. I like to top it with a splash of milk and a drizzle of almond butter for serving.

  • I tried it. But it’s so much milk! It’s way too too wet. Is it supposed to be 2 1/2 cups of milk?

  • @eatingbirdfood I should be able to substitute steel cuts oats for rolled oats right? I don’t feel like heading out to the grocery store yet again!
