Okay, show of hands who has tried @kashi’s Mayan Harvest Bake? ๐Ÿ™‹๐Ÿป It used to be my go-to frozen meal when I first started living a healthier lifestyle. I loved it so much I recreated a homemade version way back in 2010. It was good, but I’ve learned a bit more about cooking (and photography) since then so I updated the recipe and took new photos for ya! The bake is essentially a vegan + gluten-free casserole with layers of polenta, quinoa, roasted sweet potatoes, plantains, kale and black beans all in a rich ancho chili sauce. It’s delicious and makes a big portion so once you make it you can enjoy it several times! Or freeze it and create your own frozen meals. ๐Ÿ’ƒ๐Ÿป (Recipe link in bio.)
