Move over sweet potato croutons, there’s a new salad topper in town -maple roasted kabocha squash! 💯 If you’re not feeling a salad, no worries! These squash wedges make for an awesome side dish on their own.

If you’re new to kabocha squash, it’s #lowcarb carb #highfiber squatty dark green winter squash with deep orange flesh – also called Japanese pumpkin. I find the taste is sweeter than butternut and the texture is smooth, almost creamy — it’s like a sweet potato and a pumpkin had a baby. 🍠🎃👶🏻 Also, the green skin softens right up and is totally edible after cooking/roasting so you don’t have to peel the skin off!
