Meal prep makes healthy eating a breeze. And I’m all about batch cooking or making one easy recipe than can be eaten for multiple meals! .
These vegan curried chickpea bowls are a prime example. The chickpeas are paired with garlicky spinach (gotta get those green veggies in) and brown rice for an easy meal that’s absolutely delicious and filling. Feel free to swap the rice for quinoa, farro or even cauli rice if you want to switch it up a bit.
