Kicking off this week with an oldie but goodie. These BAKED PUMPKIN OATMEAL CUPS are one of my favorite fall breakfast recipes! 🎃🍫🍁
They are #glutenfree and #dairyfree, SO easy to make and are perfect for #mealprep. You can make a batch today and have breakfast covered for the rest of the week. They’re delicious on-the-go straight out of the fridge or reheated with a little nut butter drizzled on top! 💯 Added bonus: They freeze really well so you could make a double batch and put half in the freezer for later. I am definitely going to be making a batch (or two) to freeze so I can have them on hand for when baby girl arrives. 💃🏻
The other great thing about these oatmeal cups is that you can customize them and add whatever mix-ins you want. Chocolate chips, walnuts and raisins all pair really nicely with the pumpkin spice flavor, but I also think cranberries, pecans, or coconut flakes would be delicious too. 🙌
