Introducing my newest creation: CHEESY EGGPLANT TURKEY CASSEROLE! 🍆🧀🍅 With layers of eggplant, protein-rich turkey and mozzarella cheese this dish is definitely comfort food made healthy. 🙌 ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Casseroles are seriously the best, especially when you’re looking to make a hearty, family sized meal. Even if you’re just cooking for one, casseroles are still great because you’ll have delicious leftovers to last you for a few days. And who doesn’t love leftovers?! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pro tip: Eggplants hold a lot of water, so in order to make sure the casserole doesn’t end up soggy or extra watery, just make sure to sprinkle salt on the slices ahead of time. This will help to pull excess water from the eggplant. 🍆
