Kicking off Day 1 of the #saladeveryday challenge with this salad I made using leftovers we had in the fridge. Here’s what I loaded in my bowl: baby arugula, shrimp, grilled peppers, zesty tahini dressing along will fresh dill + cilantro. Fresh herbs are the best kept salad secret because they’re such a great way to add flavor without extra cals. πŸ™ŒπŸ» On the side I’m having homemade guac and plantation chips for some healthy fats and some carbs. This combo makes for a #mealsizedsalad that’s 100% delicious and satisfying. πŸ₯—πŸ’―πŸ’ƒπŸ»

I’m pumped because this round of the challenge is coming at the perfect time for me. πŸ™‹πŸ»We had Isaac’s sisters wedding last weekend, which was amazing and full of celebrating. Drinks, restaurant eats and cake! ☺️Such a blast, but I’m ready to get back on track with healthy meals and I’ve found that salads are such an easy way to do just that.
