Keeping it super simple for bfast today with avocado toast topped with a soft boiled egg, salt, pepper and crushed red pepper flakes. Added an extra full egg + egg white on the side to amp up the protein a bit! 💪🏼 Perfect combo of protein, healthy fat and fiber-rich carbs for a satisfying and filling meal! 🥑🍞🥚💯

Also… without fail every time I post a photo with a soft boiled eggs I get asked how to cook them so I thought I’d share my go-to method:

1️⃣ Grab a large pot, add 2-4 eggs and cover with cold water. Place pot on the stove over high heat and bring to a boil.
2️⃣ Once water is gently boiling, cover pot, remove from heat, set a timer and let eggs sit for 6-8 minutes, depending on how soft you want your eggs.
3️⃣ Use a slotted spoon to remove eggs from the hot water and place a a bowl with ice cold water to chill for at least 2 minutes. Peel and eat or chill in the fridge until ready to eat.

Note about timing: 6 minutes and 30 seconds will give you soft boiled eggs where the whites are cooked through and the yolks are soft, jammy and a little runny. I did 8 minutes for the eggs on my toast this AM, which results in a solid yolk that’s still a bit jammy. 🥚💛💯
