In Grand Cayman for the week (a little 6 year anniversary + babymoon combo trip) so I’ve got tropical eats on the mind! 💗🤰🏻🏝 Actually sipping a virgin piña colada rn, which made me think of this recipe… Tropical Overnight Oats. 🥭🍍🍌 🥥 .

Here’s how to make it:
• 1/2 cup old fashioned oats
• 1/2 cup unsweetened almond milk
• 1/8 cup plain yogurt (I used Greek, but you could use almond or coconut for a non dairy option)
• 1/2 banana, mashed
• 1/4 cup frozen or fresh pineapple, chopped into bite-size chunks
• 1/4 cup frozen or fresh mango, chopped into bite-size chunks
• 1 teaspoon chia seeds
• 1/2 teaspoon vanilla extract
• 1 Tablespoon unsweetened shredded or flaked coconut (toasted or raw)

1️⃣ Add oats, almond milk, yogurt, mashed banana, 1/4 cup pineapple, 1/4 cup mango, chia seeds and vanilla into a bowl. Stir well to combine.
2️⃣ Cover container with a lid or plastic wrap and place in the fridge overnight. Enjoy the next morning! .
