In case you didn’t already know, I LOVE a good sheet pan meal! 💯 One bowl + one pan and boom, you’re done! It’s my go-to whenever I want to make something QUICK & EASY for dinner. And it’s been a long week over here, so I definitely want to keep tonight’s dinner as easy as possible. .
On the menu for tonight is my latest one-pan dinner creation… BUTTERNUT TOFU SHEET PAN! This vegan dish features tofu, chickpeas, butternut squash, and red onion (but feel free to use whatever veggies you have on hand). Everything is roasted and served with a creamy tahini sauce for a flavorful, protein-packed #plantbased meal. If I do say so myself, it’s one of my favorite sheet pan meals yet! 💁🏻‍♀️

The tahini sauce is definitely the star of the show, so promise me you won’t skip it! It’s 1000% worth it and only takes 10 minutes to make! 🙌 Plus, you can use the leftover sauce on literally ANYTHING… salads, pasta, buddha bowls, protein, you name it. .
