I’m so excited to celebrate our first Thanksgiving as a family of 3 (well, technically 4)! 👩🏻👨🏻👶🏻🐶 Since it’s looking like we’ll still be in Charlottesville next week, Thanksgiving will be a little different this year. In between monitoring Olivia at the hospital and trying to rest up before we take her home, I probably won’t be cooking this year. But if I was cooking these ROASTED ROOT VEGGIES would definitely be on the menu! I mean look just at those colors! 💃🏻

This dish is made with sweet potatoes, carrots, parsnips and onions and can be tossed together in a matter of minutes (just chop, toss and roast). 🥕🍠🥔💯 The veggies come out caramelized to perfection and are seriously addicting. It’s not only a great side dish for the holidays, but is also the perfect recipe to make as part of your weekly meal prep.

PS – Did you know that roasted root vegetables are not only packed full of antioxidants, fiber, essential vitamins and minerals, but they can also help with sweet cravings? The roasting process caramelizes the oriundo sugar of the root vegetables so after roasting they taste amazingly sweet and delicious. 🙌 ⠀⠀⠀⠀⠀⠀⠀⠀⠀
