Hope Santa likes pillowy soft grain-free chocolate chip pumpkin cookies with vanilla frosting because that’s what going down over here tonight. πŸŽ…πŸΌπŸͺπŸ’― Merry Christmas Eve, friends! βœ¨πŸŽ„πŸ’—

The recipe is similar to one I shared on the blog years ago but made healthier (#grainfree #glutenfree) using @simplemills products. Not sponsored, just a brand I love.

Grain-Free Pumpkin Pillows
.
– 1 box @simplemills vanilla cake mix
– 2 teaspoons pumpkin pie spice
– 1 can (15 oz) or 1 3/4 cup pumpkin
– 2 eggs
– 1 tub of @simplemills vanilla frosting
– 1/2 cup chocolate chips

Directions:
1. Heat oven to 375Β°F. Spray cookie sheet with cooking spray.
2. Mix cake mix with 2 teaspoons of pumpkin pie spice in a large bowl. Stir in pumpkin and eggs. Gently stir in chocolate chips. Dough will be really wet and more like cake batter than cookie dough.
3. Use a medium cookie scoop or tablespoon to drop dough by heaping tablespoonfuls about 2 inches apart onto cooking sheet.
4. Bake 12-15 minutes or until set and very light brown. Remove from cookie sheet and let cool on a wire rack.
5. Place frosting in a microwave safe bowl and microwave in 15 second increments until frosting is smooth and thin enough to drizzle or spread. Drizzle to spread frosting on top of each cookie. Store cookies in the fridge. .
