From the look of today’s lunch you might think I spent over an hour in the kitchen, but this took me just 10 minutes to toss together because I prepped everything in advance. 🙌

The cauliflower shrimp and grits were leftover from cooking day last week and I prepped the kale, my tahini dressing and the sweet potato croutons yesterday! All I had to do today was toss everything together, reheat the shrimp and grits and dive in. If you’re super busy and find yourself eating poorly because you don’t have time… consider spending a tiny bit of time to meal prep/batch cook on the weekend. It’s seriously a game changer. Also, my other secret (not so secret tip) is to order your groceries online… I started doing this regularly and I’m amazed by how much time and energy it saves!
