Finally got over my irrational fear of cooking with tomatillos and created a DIY version of @choptsalad’s #vegan Mexican Goddess dressing made with tomatillos, avocado, lime and cilantro. It took me about 10 tries to get it just right, but I think this version is pretty spot on. 💁🏻♀️
The best part about this dressing it that it packs a ton of flavor, but it’s really light so the serving size is about 1/4 cup and only 75 cals. There’s no oil but it’s super creamy from the avo. 🥑 Seriously, it almost tastes like it has cheese or dairy but it doesn’t! And it’s pretty darn versatile too. I’ve been using it as a salad dressing, as a sauce for tacos and as a dip/salsa for veggies and chips. You gotta try it for yourself! Grab the full recipe via the link in my profile.
