Created the easiest carrot cake loaf today using @simplemills pumpkin bread mix + frosting! 🥕🍰💯 Their mixes are hands-down my fave (love that the ingredients are super simple + grain-free) and I knew the pumpkin flavor and spices would work great as a base for carrot cake bread. 💯

PS: The whole loaf is almost gone. 🙈 Luckily we had friends over who helped us devour it. 😂

Here’s how to make it: prep the @simplemills pumpkin loaf according to the package instructions with 3T coconut oil, 3/4 cup water and 3 eggs. Gently mix 3/4 cup grated carrots and 1/4-1/3 cup raisins into the batter. Pour batter into a greased loaf pan and bake at 325F for 30 minutes, cover pan with foil and bake for another 35 minutes. Let cool, remove from pan and spread @simplemills vanilla frosting. I used about 1/2 the jar and I like to heat it in the microwave for about 30-60 seconds so it’s easier to stir and spread. Sprinkle walnuts on top, slice and enjoy. 🙌
