Can we take a moment to talk about cornbread?! I seriously love it so much. But, not just any cornbread, these PUMPKIN CORNBREAD MUFFINS are my all-time fave. They are slightly sweet (cornbread has to have a hint of sweetness or it’s not worth it, IMO 💁🏻‍♀️). They make the perfect side to a big bowl of cozy chili or soup… like the pumpkin soup I shared yesterday. 🍲💯

I grew up eating sweet cornbread, usually straight from Jiffy the box, so this recipe was inspired by my childhood. But this version is much better for you. 💁🏻‍♀ It’s dairy-free, egg-free and made with whole grains and coconut sugar. It can also easily be made vegan. 🙌
