BAKED EGGPLANT PARMESAN that’s also #glutenfree + #grainfree! 🍆🍅🌿🧀 .
Isaac LOVES his eggplant parm and traditionally this dish is fried and loaded down with oil so naturally I decided to make a healthier version! My recipe still has all the delicious mouth-watering flavors of a classic eggplant parm, but requires no frying and it uses almond flour to give the eggplant a crispy coating instead of the typical bread crumbs. 🙌

The eggplant slices are coated in an almond flour parmesan mixture and baked to crispy perfection. They are so stinkin’ delicious that they’d even make for an awesome appetizer on their own, but they’re so yummy layered in this dish. .
The magic happens once the eggplant slices are done baking. With layers of marinara sauce, crispy eggplant, fresh basil and so much cheesy goodness this dish is definitely a #comfortfood keeper. 💯

PS – If you have a nut allergy or don’t have almond flour on hand you can totally use the bread crumbs instead. I tested both versions and they both turned out perfectly!
