Apparently day 4 of #saladweek is all about Mediterranean food because I have a second Mediterranean salad to share tonight. This one is vegetarian, meal prep friendly, loaded with a variety of fun toppings and SO dang good. .
If you haven’t tried farro before, let this salad be a sign that you should. It’s an ancient grain with lots of fiber, B vitamins, iron, zinc and a good amount of protein. It has a delicious, mildly nutty flavor, and I love the chewy texture! #eatingbirdfood #saladeveryday .
Random side note, I spell Mediterranean wrong every.single.time I type it and I never get it close enough where spell check can help fix it. I literally have to Google it to get it right. Does this ever happen to you? If so, comment below with the one word you can never spell correctly just so I don’t feel like such a dumb dumb.
