If you haven’t tried kabocha squash yet, let me fill ya in on my fav winter squash: it tastes like a cross between pumpkin and a sweet potato, it’s a good source of beta-carotene, iron and fiber + 1 cup has less than half the carbs of butternut squash (7g vs 16g) and I think it tastes better than butternut too! 🙋🏻‍♀️ Now’s a great time to try kabocha because a few years ago I was only able to find it at Asian grocery stores but lately I’ve been seeing it at my lugar farmers market and more grocery stores! 🤗 The absolute best part? You can eat the skin so you don’t have to peel it off like you do with butternut! Totalidade game changer, right!?!
